Typical food of Tenerife

Canarian cuisine stands out for the quality of its ingredients and the care in its preparation.

The geographic and historical context of the Canary Islands has shaped Tenerife's culinary culture: Guanches, Berbers, mainland Spaniards, Portuguese, and even British and Latin Americans have contributed products and cooking methods. 

Its insular nature has influenced traditional dishes, simple and hearty, where staples like gofio, fish, meat, grains, potatoes, and sweet potatoes prevail. The result is a collection of simple but very flavorful recipes.

In Tenerife, you will enjoy guachinches, characteristic of the island, traditional cuisine restaurants, or Michelin-starred establishments that have perfected these recipes. Moreover, the volcanic soil and trade winds have produced spectacular wines, the perfect pairing. 

Gofio

Gofio

Gofio is a traditional food dating back to the ancient Indigenous culture of the Canary Islands: the Guanches. It is a flour made from roasted cereals, mainly barley, wheat, and corn, and occasionally some legumes (chickpeas or beans). It is usually used as a side for stews and fish dishes. It is also common for breakfast with milk or as an ingredient in desserts, such as mousse or cookies. 

Mojo canario

This sauce is another native product of the Canary Islands and part of its essence. It is used as a side for ‘papas arrugadas’ and some meats and fish. Mojo picón, red in color, is made with peppers, oil, garlic, breadcrumbs, and hot peppers. Mojo verde, milder, is made with green peppers, parsley, and fresh cilantro.

Papas arrugás

This is how locals refer to wrinkled potatoes, another typical product of Tenerife and the other islands. It is a small variety of potato cooked with skin in a small amount of heavily salted water. The potatoes are cooked until the water evaporates, leaving the salt adhered to the skin. They are usually served with the island's typical mojos. If you are interested in traditional Tenerife cuisine, we recommend visiting La Papa Bonita, an association dedicated to recovering, cultivating, and promoting the "Old Potatoes of the Canary Islands" (which have Protected Designation of Origin) .

Puchero canario

Puchero canario is a hearty dish consisting of a soup as the first course and a stew of vegetables, meat, and legumes to follow. It is prepared in a large pot to which meat, chorizo, bacon, chickpeas, pieces of corn cob, green beans, cabbage, and carrots are added. Then, pumpkin, zucchini, and pears are added. Finally, sweet potatoes and potatoes are introduced. The dish is flavored with saffron, garlic, and cumin. It is one of the most complete dishes in traditional cuisine, a delight not to be missed.

Cheese

The people of Tenerife have a great appreciation for their locally made artisan cheeses, still produced in rural areas. Fresh and white cheeses with a pleasant fresh milk aroma and a touch of salt are especially consumed, but also smoked or cured cheeses, sometimes coated with paprika or gofio. Fresh cheeses flavored with wood or almond shells are also highly valued. They are consumed as an appetizer, also grilled and as a dessert, accompanied by mojo or honey.

Volcanic wines

Tenerife has vineyards up to 1,700 meters above sea level, on steep terrains that complicate both vine cultivation and harvesting. Partly because of this and the volcanic nature of the soil, experts call this "heroic viticulture". The result is a wine with a light texture, strong aroma, a marked mineral expression, a characteristic salty touch, and balanced acidity. Pure delight for the senses!
